Rice, peppers, cumin, black lemon and passion fruit

For lovers of gourmet combinations, a risotto that is really simple to prepare, but capable of becoming the king of the evening.

Bianco Essenziale Rice 360g

Butter 15g
Parmesan cheese 15g
White Wine 1 glass
Cumin As needed
Black lemon As needed
Oil, salt and pepper As needed
Red pepper 4
Yellow pepper 1

A super easy and very tasty risotto.
  1. Finely chop the onion for the sauté, clean the peppers and cut them into squares, add them to the sauté and slowly start cooking (approx. 1 h 20 min). Blend it all together to create the cream with which you will cream the rice at the end of cooking.
  2. Toast the rice with butter, then deglaze with wine, which you’ll let evaporate completely and start cooking with just hot water. After about 14 minutes, remove the rice from the heat, add the pepper cream, Parmesan cheese and stir.
  3. Finally, add cumin, passion fruit and black lemon to finish the dish.
