Ingredients

Nero Assoluto Rice 360g

Fresh squid 3
Butter 30g
White wine 1 glass
Salt and pepper As needed
For the mayonnaise:
Red turnip 1
Egg 1
White wine vinegar 12ml
Various seed oil 220ml
A rice in colour, also in taste.
  1. Start cooking the rice by melting 15 g butter and once toasted well, deglaze with white wine, let it evaporate and then add boiling water until cooked.
  2. Let the black rice dry well.
  3. Separately, quickly blanch the squids, cut them into pieces and add them to the rice.
    With the tails, wings and its black go and ‘press’ circles which you will then place on top of the rice at the time of serving.
  4. To prepare the red turnip mayonnaise, place the egg with the vinegar, salt and pepper in a jug.
    Start blending and add the multiple seed oil, slowly, a little at a time until mayonnaise of the desired consistency is formed. Finally, add the extract of a red turnip and mix everything together. Accompany to the dish.
